25 years ago when Cuisine Studio started we had the odd vegetarian or vegan to cater for; today we find ourselves in a far more serious situation with the growing number of acute conditions such as Coeliac Disease, Lactose Intolerance and Nut Allergies.
While vegetarian and vegan customers are always catered for, this is an elected lifestyle choice, not a health threatening condition, which is often overlooked by some establishments. At Cuisine Studio we go to great lengths to ensure gluten and nut free foods are prepared first thing in the morning while the kitchen is as sterile as possible to reduce the risk of cross-contamination.
Unfortunately there are no measures in place within the hospitality world to enforce the strict regulations that govern gluten and nut free food production. It is essential that every estblishment understands the implications of these conditions, particulary with Coeliac Disease which is not an actual allergy, as I often get the impression people think sufferers are being fussy or simply choosing not to eat certain foods.
If you are a sufferer, please notify your caterer in advance and make your voice heard; eventually we will change perceptions and get every establishment to recognise this problem.

Be Prepared For Christmas
Get ahead for Christmas and start filling the freezer with prepared vegetables, stuffings, puddings and of course not forgetting the bread sauce. To minimise deterioration in the products when defrosted, invest in a small vacuum sealing machine (about £40 from many retailers). As well as space saving, it allows the food to thaw without collapsing.
More importantly you will need this device if you are to follow this blog as we are currently developing the 'Sous Vide' water bath cooking method (practiced by Heston Blumenthal). Believe me it is a new and exciting way forward for all you foodies!
